Summer Celery Salad

I had a lot of celery left in the fridge and I really had no idea what to do with it.  It was nearly 95 degrees last night and there was no way I was in the mood to make soup, so I opted for celery salad.  So here goes…. (6) (2)



1 small bunch of celery (peeled and chopped, or cut into 1 in strips)

¼ cup chopped red onions

2 cloves garlic minced

1 apple chopped

¼ cup chopped red pepper

1 tbs chopped cilantro

¼ cup parmesan


Simple Mustard Dressing

1 tbps mayo

1 tsp regular mustard

1 tsp brown mustard

Ground pepper

Salt to taste

1-2 tbs apple cider vinegar


Combine the fruit, veggies and parmesan in a large bowl.  In a separate small bowl, mix the mayo, mustards, vinegar, ground pepper, and salt to taste.  Add the dressing to the garden mix and toss until well combined.  All done! (4)
