Garlic Fried Rice
This is one of my favorite recipes for fried rice and one of the easiest! It is a staple in my house and I cook it at least once or twice a week.
This recipe only calls for a couple ingredients.
Roasted Garlic (or pan fried garlic cooked till very golden brown)
3 cups Cooked Rice
Cooking Oil ( I prefer Olive)
4-5 Eggs (Optional but makes it so much better)
First heat up the oil in the pan over medium heat lightly scramble the eggs in the pan (careful not to scratch the pan). Cook the eggs a little before done and remove them from the pan and set aside.
Add 1-2 TBS of Garlic along with the rice. Smash down any lumps and flatten rice to the bottom of the pan. This allows the rice to get a nice crispness to it. Cook like this for a minute then mix around so you don’t burn the rice. Add in the salt and pepper to taste along with the egg. Mix thoroughly and remove from the heat.
Now you have a tasty side dish, meal or snack.
You can eat this with almost anything. I prefer to just eat it by itself since there is so much great flavor.
