Easy Fried Rice

I’ve been making Fried Rice as long as I can remember.  Here is a classic recipe that is simple and fast.

1-2 tbs. Olive Oil
3 eggs scrambled (separately)
½-1 bulb of garlic
½ c. chopped onions
½ lb of meat, tofu or you can just add more veggies
¼ c. thinly sliced  carrots
½ chopped tomatoes
¼ c. frozen or fresh peas
3-4 cups of cooked rice
2 tbs soy sauce
1 tsp Maggi Seasoning Sauce (Optional)
1 tsp of sugar
Salt and pepper to taste

Heat oil in a wok or deep pan on medium heat.  Scrambled the eggs until almost done and removed from pan.  Since the eggs probably soaked up most of the oil ad a little more oil and once it’s hot enough add the onions.  Wait a few minutes and add the garlic.

Once the garlic is browned cook meat until 95% cooked.  Add all the veggies EXCEPT the peas and saute for 1 minute.

Add rice and mix and flatten into pan.  Once the rice is mixed evenly with the rest of the ingredients add the soy sauce (if the amt. in the recipe is too much or too little just make sure the color of the rice is a light light brown…not too dark or else it will be too salty)

Add the Maggi at this time too (if you have it).  Once the color looks about right, add the sugar, tiny bit of salt (if needed), and pepper.

Now add in the eggs and peas until the peas are cooked.

Tips

You can add whatever veggies, spices, protein you like.  It’s kind of one of those left over meals to make on the quick.
